Instructions
Step-by-step to Freeze Ripe Avocados
Have plate available with parchment paper (parchment is optional but I recommend it because it helps peel the avocado right off after a short freeze) laid on it.
Cut ripe avocados in half, remove the seed, and remove the skin from the avocado.
Place halves cut side up on tray lined with parchment paper.
Squeeze lime over the tops of avocados and cover with plastic wrap or airtight lid.
Transfer after 2 hours to a freeze bag (if you prefer space saver storage), removing as much air from the bag as possible and return to freezer.
Notes
Yield: 12 frozen avocado halves. or as little as 1 cup frozen avocado storage.
Storage life: use frozen avocados within 3 - 6 months.
Important freezer note: Avocados beyond 6 months of freezer storage are no longer creamy and break down differently. Their taste is not flavorful.
Pro Tip! I advise not to waste fresh ingredients creating salsa from frozen avocado that is over 6 months old.
Lime use is optional but highly recommended! I've frozen avocado multiple ways and squeezing lime before freezing in airtight container always leaves me the nicest avocado color, as seen in the picture of a frozen avocado half. Photo available in the full post!
Oxidation is normal and will be on the exterior at times but that wont impact the color of your future salsas and dressings!
If you prefer freezing individual avocado pieces for to-go options, wrap each half in plastic wrap after the brief freeze. Then return wrapped halves to freezer storage bag or container. Always eliminate the air in the bag.
Once you’re ready to use your frozen avocado thaw for 20-30 minutes covered at room temp. I don’t recommend rushing their process for thawing.
Uses of frozen Avocado: After frozen avocado has thawed, make puree, dressings, spicy avocado sauce for taquitos, spreads, hummus, and more.
To cube, allow thaw, and then cut into desired chunk size and sprinkle with lime or lemon juice. Always cover airtight to prevent browning.
