Fake Guacamole [for Tacos]

What is Fake Guacamole salsa?

Using Mexican zucchini instead of avocado as a substitute isn’t new. It’s been around a long time and is a staple salsa for taqueria spots when avocado prices are high, during supply shortages, or it is simply not in season.

Its vivid green color and familiar avocado texture give us the idea, “there’s the guacamole sauce!”. And it’s all good 🙂

Ingredient Quick List: fresh Mexican squash, onion, garlic, serrano or jalapeno, salt and optional cilantro + pantry spice [ground cumin].

Ingredient notes

Zucchini choices, first choice is always Mexican squash to match the color of the real thing BUT Italian zucchini can also be used if your farmers market or grocer doesn’t have Mexican zucchini. The color won’t be exact as in our recipe but still green.

Garlic lovers, add another clove of raw garlic for extra garlicky sauce.

Onion, yellow and white onion can both be used but our preference if white onion for it’s spicier-sharp flavor. We use up the rest of the onion other easy toppings and in meals.

Does it require Cilantro? No. Its traditionally made with cilantro but versions made without cilantro are possible too. We get it, sometimes you just wanna use the cilantro in other things or on the side.

In the instructions I’ve provided below you’ll see where to add-in the cilantro. You’ll have the option to opt-out of the cilantro for your homemade batch of fake guacamole.

Note: Keep in mind that the sauce will be green but removing the cilantro from the recipe will result in more of a tomatillo green.

Ingredients

  • 2 whole small Mexican squash about 3/4 lb total weight, diced
  • 1 1/2 cups water
  • 3 jalapeno or serrano, or both for spicy.
  • 1/2 bunch cilantro 1 cup loosely packed cilantro
  • 1/4 piece onion white or brown
  • 1 clove garlic
  • 1/2 whole lime juiced
  • 3/4 tsp kosher salt or, 1/2 tsp sea salt.
  • 1/2 tsp ground cumin optional

Instructions 

How to Make the Fake Guacamole salsa

  • Wash and prep ingredients. Cut squash into 1-1.5 inch pieces.
  • In a pot, place zucchini, peppers, and water. Turn the stove on medium heat. Let cook for 15 (18 minutes if still not tender) minutes. [Note: Set the timer as a reminder!]
  • Once cooked, transfer the pot from the hot burner. Let cool for 15-20 minutes.
  • In a blender, place all contents from the pot. Add onion, garlic, and salt. Blend for 30 seconds.
  • If not adding cilantro, the salsa is ready to transfer into a bowl. Sprinkle with juice from half a lime and stir in.
  • If adding cilantro, open the blender, add cilantro, and blend for 10-15 additional seconds.
  • Transfer into a bowl. Sprinkle with juice from lime and stir.

Notes

  • Recipe Yield: 2.5 cups fake guacamole, 10- 2 ounce servings
  • Storage: Let cool entirely before refrigeration. Cover in air tight container and eat within 6 days. Mix with a spoon for the best-tasting fake aguacate sauce.
  • Optional Ingredient: adding tomatillos to this salsa is an option! If you’re into green salsa and have tomatillo on hand, add 1 or 2 to the boil. Liquify longer if making this change.
