2wholesmall Mexican squashabout 3/4 lb total weight, diced
1 1/2cupswater
3jalapenoor serrano, or both for spicy.
1/2bunch cilantro1 cup loosely packed cilantro
1/4pieceonionwhite or brown
1clovegarlic
1/2wholelimejuiced
3/4tspkosher saltor, 1/2 tsp sea salt.
1/2tspground cuminoptional

How to Make the Fake Guacamole salsa
Wash and prep ingredients. Cut squash into 1-1.5 inch pieces.
In a pot, place zucchini, peppers, and water. Turn the stove on medium heat. Let cook for 15 (18 minutes if still not tender) minutes. [Note: Set the timer as a reminder!]
Once cooked, transfer all the pot from the hot burner. Let cool for 15-20 minutes.
In a blender, place all the contents from the small pot (the water too, see notes sections for more info). Add the onion, garlic, and salt. Blend for 30 seconds.
If not adding cilantro, the salsa is ready to transfer into a bowl. Sprinkle with juice from half a lime and stir in.
If adding cilantro, open the blender, add cilantro, and blend for 10-15 additional seconds.
Transfer into a bowl. Sprinkle with juice from lime and stir.
The longer you blend, the smoother the salsa will be for tacos, nachos, and more. Be sure to check it after the 30 second mark to ensure it's how you enjoy it.
Storage: Let cool entirely before refrigeration. Cover in air tight container and eat within 6 days. Mix with a spoon for the best-tasting fake aguacate sauce.
For ZERO spice. Omit the peppers.
Since all the ingredients have been washed thoroughly I use the warm water the pot in the salsa too, especially after the suggested cool-down time.
Fresh water is fine too. It's a matter of preference to cada casa.

Optional Ingredient - adding tomatillos to this salsa is an option! If you're into green salsa and have a tomatillo on hand, add 1 or 2 to the boil. Liquify in blender for longer if making this change.
