1wholeyukon gold potatoesabout .5 lb total, small diced.
4largeeggs3-4 if using only 1 potato, 4-5 if using 2.

Instructions
To make the Papas con Huevo
Prep all ingredients.
Carefully peel and dice potatoes into small bites. Slice the garlic, set to side, and In a small bowl, break up the eggs and set to side.
Heat pan on medium heat. Add butter to the pan.
Once butter begins to melt, add garlic to the butter, stir in and let garlic heat for 1 minute.
Lower heat to med/low, add potatoes, sprinkle with salt and fold over a few times so all pieces have touched the butter. Cover with lid and set timer for 10 minutes. Let cook.
Uncover and turn up to medium heat. Fold potatoes over once and then add egg mixture. Let eggs cook for one minute before scrambling into cooked papas.
Turn stove off. Cover with lid for 2 minutes then serve immediately or transfer onto a plate.
Total time, about 15-18 minutes.

Recipe yield: about 2.5 cups breakfast eggs and potatoes.Servings: Enough papas and eggs for 4 mini burritos, or 6 tacos.Storage: Place in an air tight container to prevent from drying out.
