Hearty and filling breakfast to get you ready for the day ahead. The butter or oil you cook the potatoes in is flavored with a clove of garlic which sets this dish aside from the rest.
It leaves a savory and memory soft scrambled bite. It’s definitely a breakfast dish you’ll crave like its other sibs, such as nopales and eggs, leftover holiday ham and eggs scramble, and chorizo con papas.

- 1 yukon gold potatoes (yields about 2 cups), small diced!
- 4 eggs
- 1 garlic clove, minced or sliced thin
- 1 tsp butter, (or up to 2 tsp)

- Yukon gold potato – Russet potatoes are commonly used for this breakfast dish. But, I prefer to make this breakfast with yukon gold.
- They cook well when diced small and they’re medium-starch which means a denser bite. If you like really soft texture, use russet.
- Eggs are so good and essential to this dish. I recommend mixing the eggs in a bowl (photo below) and setting to the side first if this is your first time making this. They cook quickly and evenly this way. If you like scrambling within the pan, that’s ok too!
- Garlic is a flavorite around here! I think this makes all the difference in this classic Mexican breakfast. Slice (1) clove thin, before frying it for a sec in butter. Alternative to this is frying the whole clove in the oil just for its flavor. This will require more active time but it’s also an option.
Pro Tip: When I want to hide the pieces of garlic as hidden veggies I mince it all up.

- Cracked black pepper. Think black flecks in cooked eggs. The longer cooked in heat, the peppery it will be.
- Thin sliced rounds or minced fresh serrano pepper. Add right after the potatoes cook and before adding eggs.

Ingredients
- 1 whole yukon gold potatoes about .5 lb total, small diced.
- 4 large eggs 3-4 if using only 1 potato, 4-5 if using 2.
- 1 clove garlic minced or sliced thin.
- 1 tsp butter (or up to 2 tsp)
- salt for salting the papas while they cook.
Optional Ingredient
- Cracked Pepper to taste
Instructions
To make the Papas con Huevo
- Prep all ingredients.
- Carefully peel and dice potatoes into small bites. Slice the garlic, set to side, and In a small bowl, break up the eggs and set to side.
- Heat pan on medium heat. Add butter to the pan.
- Once butter begins to melt, add garlic to the butter, stir in and let garlic heat for 1 minute.
- Lower heat to med/low, add potatoes, sprinkle with salt and fold over a few times so all pieces have touched the butter. Cover with lid and set timer for 10 minutes. Let cook.
- Uncover and turn up to medium heat. Fold potatoes over once and then add egg mixture. Let eggs cook for one minute before scrambling into cooked papas.
- Turn stove off. Cover with lid for 2 minutes then serve immediately or transfer onto a plate.
- Total time, about 15-18 minutes.
