This recipe is not going to use up the whole pack of franks. Which is awesome because how often are you really eating hot dogs for burritos that regularly. Let’s mix the ideas and switch up meals up a bit for max flavor!

  • 4 Eggs
  • 3 Hot dog franks
  • 1 teaspoon Butter
  • 1/2 teaspoon Black pepper
  • 3 Flour tortillas or 6 tacos

Extras: ripe avocado, shredded cheddar cheese, ketchup

Ingredient Notes / Variations

  • Eggs – fresh eggs, cold. Don’t pull them out until ready to cook.
    • If using farm fresh at room temp, pre-whisk cause they’re gonna cook faster than if refrigerated.
  • Weenies – there are lots of packaged hot dog varieties; like chicken, turkey, or beef. We make this most often with standard size turkey-dogs.
    • If using Jumbo Franks, use 1 less weenie than the recipe calls for.
    • Slice rounds medium-thin to thin.

  • Butter – salted or unsalted both are fine.
  • Black Pepper is essential in my recipe scramble for me because I love the kick of flavor from peppered eggs. It is my recommendation.
  • Flour tortillas – standard 8 inch flour tortilla for burritos, or 5 inch tortillas for tacos.

Step-By-Step Instructions

How to Make the Eggs with Weenies for Burritos

  1. Have all ingredients nearby and prepped, don’t forget the pepper.
  2. Warm the pan and place sliced hot dog franks to warm then add the butter.

  1. Once the butter melts add the eggs and let them cook for about a minute before beginning to scramble. This gives them a minute to fluff up.

  1. Gently and quickly begin to fold eggs over into scramble. Gather them toward center so they stay warm and soft scrambled.

To make the Breakfast Burritos with the Eggs

Fill each warm flour tortilla with 1/2 cup scramble and optional extras for taste variety.

Equipment

Ingredients

  • 4 large eggs
  • 1 tsp butter salted
  • 3 weenies
  • Cracked Pepper to taste
  • 3 Flour tortillas support a local tortilla factory if available!

Optional Ingredient and extras

  • 1 tbsp onion diced small (if adding to saute with hot dog franks)
  • shredded cheddar
  • ripe avocado

Instructions 

To make the Huevos con Salchichas

  • Carefully dice weenies into small rounds. A tablespoon of onion if you're adding onion.
  • Heat pan on medium heat. And add hot dog weenies to warm.
  • Once the weiners have warmed, add butter, it'll melt pretty quickly.
  • Add eggs slowly over the butter, let them cook for about 1 minute before beginning to break up the yolks into the scramble with gentle folds.
  • Lower heat to Low. Fold scramble once more and keep it centered on the pan.
  • Turn stove off. Cover with lid for 2 minutes then serve immediately or transfer onto a plate.

To make the Burritos

  • Once eggs are transferred. Use a paper towel to carefully spot remove dried eggs from pan. Place (3) flour tortillas on the warm pan and cover with lid. Flip them only once after 2 minutes.
  • Place tortillas on aluminum foil. Fill with 1/2 cup scramble and optional extras like: avocado, cheese, salsa.
  • Once burritos are rolled flap side down, fold the aluminum foil over them for a secure wrap. Place them back into the pan for as long as 10 minutes on lowest heat setting.
