What are “Rosita Beans” ?

Ok, truth be told, Rosita is what I know these beans (since I was a wee sprocket) cause they’re pink! Their actual name is Flor De Mayo in which translates to Flower of May. Often times rosita beans are over-looked from the norm usage of peruano, pinto, and black beans in weekly meal planning.

Trust me, if you’re unfamiliar you’ll want to tap in and give them a try. They’re really good in my honest-to-you opinion.

Rosita (Flor de mayo) beans aren’t always available in local grocery stores because inventory is provided based on popularity. If this is the case, let me know and I’ll try my best to find you some online vendors so you can try this pink and purply speckled dried bean type.

Dried Rosita Beans - Flor De Mayo

Fresh pepper, such as serrano or jalapeno. Dried chile de arbol is an easy substitute to the fresh chile as well if you enjoy your brothy beans with bold spice.

Ways to spice Up Rosita Beans

In order from spiciest to mild; dried chile de arbol, fresh serrano pepper, jalapeno. Use the serrano or jalapeno whole, do not chop it up unless you know your measure of spice well. Otherwise your beans may turn out way spicier.

I don’t recommend using pickled jalapenos for this recipe but if you do, remove the seeds and drain them from vinegar.

Equipment

  • 1 Instant pot
  • 1 Knife to slice onion halve
  • 1 Slotted spoon
  • 1 Food Storage container once cooled

Ingredients

  • 10 cups Water
  • 2 cups Dried Flor De Mayo beans
  • 1/2 whole White Onion
  • 3 cloves Garlic
  • 1.5 tsp Kosher Salt / sea salt or [to taste]

Instructions 

  • Place 2 cups of rosita beans in a bowl to rinse with tap cold water. Remove any beans that float to the top and simply noticeably bad beans.
  • Decide if you want additional aroma and flavor in your beans (we do, always!). Optional fresh garlic cloves (3) and 1/2 whole medium onion. Place all ingredients in the instant pot along with 10 cups of water.
  • Select the Manual button, remove the ‘stay warm’ setting, and set it to 50 minutes. Lock with lid and seal the venting.
  • Once complete, safely release the remaining pressure. Add salt and let rest with a kitchen towel over the pot or lid.
  • Transfer to a bowl with depth once ready to store in the refrigerator.
