What is a Garbanzo Bean Snack?
In parts of Mexico, street food vendors offer different varieties of fresh snack foods. Literally, seasonal sliced fruits and vegetables whether fresh or cooked.
You make your fruit or veggie selection and they’ll top it with your preference; salt, lime, dried chile, salt lime spice, lime only, whatever you want. My preference is spicy-so-good-delicious.
It’s awesome to support the vendors and still make healthy choices.
This is a favorite veggie combo when I’m in the mood for earthy fresh snacking. I treat this snack as a salad. The beans outweigh the cucumber so for me, it’s a garbanzo mixed snack which my body appreciates due to its rich iron taste.

Grocery Quick List: chickpeas, cucumber, salsa macha or favorite chili powder, lime, salt.
- Dried chickpeas, cooked chickpeas, or store-bought canned

Ingredient Notes / Suggestions
- Chickpeas – make your own cooked chickpeas at home or use canned chickpeas. Both will be good! Here’s my easy Instant Pot Chickpeas for cooking. Just make sure you chill them before eating.
- Cucumber – fresh is best. Any kind of cucumber. Peel, remove the core and use the sliced flesh. If you have access to Persian cucumber I definitely recommend using them; it’s less watery and holds well in this garbanzo snack especially if making ahead.
Substitutions cucumber for jicama if you prefer a hint of sweet. Additional vegetable to use, tender cooked and sliced chayote.
- Topping – smoky flavor chili powder and a squeeze of lime. If you have a favorite red hot sauce or chamoy.
Pro Tip: For best results use cold chickpeas and cucumber. If making ahead, add chili and lime right before snacking.

To make the iron rich garbanzo snack
- Rinse, drain, and chill chickpeas in refrigerator for 1 hour.
- Peel chilled cucumber of skin, remove center core, and slice.
- Combine all ingredients in a bowl with chile, lime, and gently mix.
