Jugo Vampiro.or Red Vampiro juice is also a short name for a Mexican street taco, cocktail with liqs, or as a refresher drink. In this post, you’ll get the all natural version of vampiro juice. Beets are a hit or miss with people, but when you try it, you wouldn’t believe it’s the drink inspo you’ve been missing.

What is a Vampiro
This one has always had a fun name. Really, it truly serves its mission for me, so what better way than to share the flavor.
It’s amongst the many natural juices that are highly nutritious from ingredient use of beetroot, carrot, celery, and orange.
For all menstrating humans your body absolutely signals when it’s craving nutrients (folate, vitamin A, and Iron just to name a few). Always question the things your body is feeling!
Vampiro juice is a healthy RED BEET DRINK.
Why You Should Try This Recipe
This recipe is for the fresh energy drink meant (gentle disclaimer – I’m not a doctor, but it’s what it does for me.) to give you a boost from natural beets, carrots, orange, and ginger.
If I’m not eating beets in a salad, sliced and dressed with balsamic or limon / queso de cabra (goat cheeze), or cup of borscht in NY, I’m getting my juiced roughage from a jugo vampiro.
I know it well and make it mostly from orange, carrots, and beets. My personal touch is omitting the celery and adding a small (i.e. about one square inch) piece of ginger.
The ginger is superfood spicy addition that puts the pep in my step.
Also, I share my process, because I’m not into funky aftertaste from all-natural body fu-el.
Take-Out Note from Erika – At juice spots on-the-go, I usually order my vampiro con jenjibre (ginger), which is extra $, because it’s not a traditional ingredient in the juice. Not all juice spots will have it available- this is your heads up! That’s why I make most of my jugos naturales at home, so I can make them with my preferred picks.
Ingredients
Grocery Quick List: FRESHEST of carrot, beet, orange, and ginger. Ice cube is optional.
- 1 Beet
- 3 Carrots
- 1 Orange, lrg
- Small piece of Ginger, like the photo below.
- EQUIPMENT: Juicer, kitchen towel, glass to juice into.
Ingredient Notes / Variations
- Carrots – even if the carrots have a few days on them, they can still be used for juicing, soups, or guisados.
- If the skins are heavily damaged, after washing produce well, I’ll peel them before juicing. Preference and comfort of thorough washed produce is key over here.
- Organic is always preferred, but wash it anyway.
- Beet – fresh beets, no pre cooked or packaged. It must be in raw natural form.
- Wash it well, really well. Remove stems with knife to avoid staining hands.
- Cut into pieces that will go through your juicer.
- Organic is always preferred, but wash it anyway.
- Orange – Skin removed, the juicier and sweeter, the luckier you are in the future of enjoying your juice.
- Remove skin and pull apart to feed the juicer.
- Why do I remove the skin? It’s easy to remove orange peel from a single orange required for this single serving recipe. Leaving the skin on leaves bitterness, and I only want the best flavor for juice.
- Ginger – can be purchased by the box or by piece. Source it at your local farmers market or supermarket.
- Peeling the ginger is optional. I don’t peel it, I just wash the piece used well.
- 1 square inch only, unless you like muy spicy.

Like juice that’s extra sweet? On occasion when in season, I’ll add a scoop of fresh pomegranate to the juice (the lil red things are technically called pomegrante arils, but you know what I mean, I think!).

How to Make our Vampiro Juice recipe
- Prep all vegetables used. Wash well, peel orange, and remove beet stems and cut.
- Place cup underneath the juicer spout and begin juicing. [I like starting with the citrus because it’s softer and lighter in color, then go by depth of each color.
- [It’s strategic because I take my juices muy seriO] Don’t forget about the small piece of ginger, the small and mighty always comes in at the end. *The exception to my own rule, but it’s fine. 🙂
- Let cup sit at base until all juice has been extracted. About a full minute.
- Juice is Ready. All the colors of natural-freshness are lined up just for you to enjoy. Stir it with a spoon to mix all the flavor and drink a good juice.

Juicer Clean-up
Cleaning the Juicer is one of the tedious task that often turns people off. Yes, I know it can feel like a mission, but you’ll build a flow, especially when you feel good drinking da juice!
Clean it within 20 minutes of juicing to avoid pulp and residue from sticking (which will then make it harder to clean). And compost the pulp if you can, your plants will thank you with blooms.
A good juicer can last a lifetime so long as you are good to it, and your lifestyle plans – si se puede. 🙂
Foods To Eat With [Beet] Vampiro Juice
A few foods that come to mind when thinking of what to eat 30-minutes after drinking juice…
- Protein sources such as lean meats, tofu, or beans help balance the quick sugars from juice. This promotes staying full for longer.
- Healthy fats from avocados, whole grains for fiber, nuts, seeds, or olive oil can help with the absorption of vitamins.
