Who doesn’t love picking out their favorite item at brunch? French Toast makes me feel spoilt all by myself! Here’s my favorite way with fresh market berries for one, two, or four depending on appetite. Learn to make it at home because feeling this fancy about AM grub is always good.

Why You Should Try This Recipe
It’s easy to make on the stove, and gives everyone a reason to treat themselves to something delicious. Fresh berries are great on their own, but combo’d up with thick sliced bread for french toast is awesome too.
There is something special about breakfast, maybe because we’re all rushing all the time. Here is the sign you need to get down on the toast and drizzle on the maple syrup to enjoy.

Ingredients to make French Toast
Grocery Quick List: bread, eggs, heavy cream, butter, fresh berries, powdered sugar, walnuts, optional syrup.
Primary freshness, the market berries!
Ingredient Notes / Variations
- Eggs – freshest eggs are great for this. I used two large eggs and my ratio is usually 1 egg per 2 slices of toast.
- If the eggs are small (like so many foods sold depending on availability) you may need to use an additional egg, so three instead of 2, for four slices of thick french toast.
- If using regular loaf, 3 slices of bread to one egg will be enough.
- Carton egg whites are good for this recipe too, use 1/2 cup for this size recipe. For richer taste since missing the egg yolks, feel free to use a bit more butter to cook this breakfast favorite.
- Heavy cream is one of those purchases that isn’t often but when you do, make multiple things from it.
- Use it to thicken the egg mixture.
- Make whip cream, sauces, and desserts.
Bread for French Toast
- THE BREAD! When you need an excuse for purchasing that super-ridiculously good local bread, make french toast!
- Local cafe bread, farmers markets, panaderias and supermarkets all have fresh options.
- Brioche, bolillo rolls, hawaiian rolls, cuernos, pan de sal, literally so many breads can be used to make this. Small pieces mean a bit more tedious work but it’s still easy to make and not time consuming. Besides, you and yours are worth it.
- If the bread has seen fresher days, just soak it for a little longer and cook on lower heat temp.
- Local cafe bread, farmers markets, panaderias and supermarkets all have fresh options.
- Butter – butter is essential to me when making this french toast but you can still use other oils like ghee or coconut oil if you must (plus knowing smoke point is important). I’ll use these options when I’m really just not trying to hit the grocery store and want to use up what I do have because there are REAL DAYS like that, and the things are all still Good.
- Salted or unsalted both work beautifully in this recipe.
- Vanilla for whip cream/butter – I use mexican vanilla most often because it’s what I stock regularly. Then powder because gelatinnnnna, or vanilla bean pod because when it’s available, I purchase it.
- Vanilla extract is also an option and widely available [hopefully]. Add some ground cinnamon to it, too!
If making the Whip too
- Heavy cream is one of those purchases that isn’t often but when you do, make multiple things from it to use it all up.
- Use it to thicken the egg mixture.
- Make whip cream, whipped butter, butter, easy alfredo, pies, custard, gelatina and more.
- If purchased whip is preferred, use a small milk instead for the egg mixture.
Erika’s Favorite french toast topping ideas:
Fruit: strawberry, berries, and sliced banana rounds. [For me bananas are last choice, idk either]! Various fruit compote as substitute for fresh, flavored sweet butter topping, or nut butters, or raw walnut pieces. Then fresh whipped cream, whipped butter, or butter.
This is my preferred topping list to get those ideas churning to help you stack it up just right!
Step-By-Step Instructions
How To Make the Spoilt Yourself French Toast 🙂 hehe.
- Wash all the fruits, and set to side to dry. You’ll slice the strawberries later (right before topping the french toast).
- If making whipped topping from scratch, make it at this point and then chill it in the fridge until ready to top the french toast.
- Make the egg and cream mixture, ensure no lumps in eggs, (this lets dipping the toast a much smoother process).
- Have sliced bread ready and egg mixture near stove pan.
- Heat pan on medium, add butter and let it melt while you dip the bread into the egg. Dipped slice-by-slice add it to hot pan to cook.
- Flip after 45 seconds, to cook on other side.
- Plate, add toppings, drizzle on any favorite syrups, natural honey or sweetener and eat good~!

The french toast is ready! Finish it off with simple powdered sugar topping or load it up with all the freshest fruit loved most like I love most!

Ways To Flip Leftover [bread / berries]
Any fresh berries left over I encourage you to eat because they offer a great source of vitamin C. Here’s a few things I make the others.
- Added to Bionico
- Oven baked Capirotada (bread pudding)
- Berries and cream as light snack or dessert
Pro Tips / Receta Notes
Recipe yield: 4 thick slices french toast with fresh berry topping.
Storage: Store any leftovers in airtight food storage and reheat on low temp until warm in center. See recipe card for more information.
Freezing is not suggested for this food but it is possible. Simply store in airtight container and reheat on low heat or steam.

French Toast and Berries with Whip Cream
DESCRIPTION

Ingredients
For french toast
- 4 slices bread cut into 1 – 1/4 inch thick slices
- 2 large eggs, for 4 slices toast 1:2 ratio
- 2-3 tbsp heavy cream for egg mixture
- 2 tsp Mexican vanilla or vanilla and ground cinnamon (optional)
- 2 tbsp butter 1 tbsp per 2 slices
Toppings
- 1/2 c blackberries
- 1/2 c blueberries
- 6 strawberries sliced when plating
- 2 tbsp walnuts
- 1 tsp powdered sugar sifted, or gently dusted by hand.
Instructions
To make the French Toast and Berries with whipped topping
- wash all fruit well and place it on a towel in a free space to dry. (We’ll come back to slicing the strawberries once ready to plate).
- Next up: whipped cream if making from scratch. (Place cream, powdered sugar, and Mexican vanilla in a chilled bowl, and blend on medium until peaks form. Watch closely because once peaks form anything beyond that will get stiffer, then to butter. )
- Prep egg mixture by combining eggs and cream.
- Slice bread of choice (if wanting specific pieces sizes).
- Have sliced bread ready and egg mixture near stove pan.
- Heat pan on medium, add butter and let it melt while you dip the bread into the egg.
- Dipped slice-by-slice add it to hot pan to cook on medium. Flip after 2 minutes, to cook on other side. Repeat 2x's if wanting crispy textures but do not overcook!
- Plate, add toppings, drizzle on any favorite syrups, natural honey or sweetener and enjoy french toast for breakfast.
